Lima Beans

Ingredients
- Lima beans
- 2 Onions
- 2 Carrots
- Half of celeriac
- Celery leaves
- 1 bulb of garlic
- Olive oil
- Salt
- Pepper
- Sugar
- Cinnamon stick
- Parsley

Recipe by Chef Mert Takış
Start with a hot saucepan. Add a little bit of olive oil and then sweat the onions. Add a cinnamon stick to the onions. Then cut the garlics' (a bulb of garlic) top, add them to the onions and sweat in lower heat. Add the chopped carrots. Peel and chop half of the celeriac and add them too. Don't sweat the celeriac too long. Add the lima beans, salt, black pepper, sugar and a little bit more olive oil to the saucepan. Add boiled water enough to cover the beans. Tie the parsley and celery leaves up and add them to the saucepan as aromatics. Cook it until the beans and other ingredients are soft and tender. When it's almost done, take out the aromatics and cinnamon stick and add the chopped celery leaves. Service with chopped parsley and enjoy it!

Tips
1. Start with a hot saucepan.
2. Don’t sweat the celeriac too long. ​
3. Don't add so much water to the saucepan. ​
4. Don’t forget to take out the aromatics and cinnamon stick.
