Vegetable Fritters

Ingredients
- 4 courgettes
- Salt
- 2 eggs
- 3g baking powder
- 200 g flour
- 100 g White cheese
- Half a bunch of dill
- Half a bunch of parsley
- 2 spring onion
- Hazelnut oil for frying - Yoghurt for dipping

Grate the courgettes, add salt and leave the excess juice to come out. Squeeze the juice out.
In a big bowl, put the squeezed courgettes, eggs, flour, baking powder and grated White cheese. Chop the herbs and add them in.
Put the batter in the fridge and wait for half an hour. Heat the oil to 190C and place spoonfuls of fritter mixture into the oil. Deep fry until golden.

Tips
1. It is very important to start with a hot pan.
2. Put the batter in the fridge and wait for half an hour.
3. Squeeze the courgette juice out.
